Plate with Portuguese Chicken Burger

Portuguese Chicken Burger

Make the Portuguese Chicken Burger as seen on Channel 10's Taste of Australia with Hayden Quinn. 


Ingredients 

  • 500g (1.1 lbs) Chicken Breast, sliced in half lengthways into steak
  • 1 cup mayonnaise 
  • 1 cup Shredded Cheese
  • Peri Peri Spice Paste ;2 tbsp smoked paprika 
  • 2 tbsp ground cilantro
  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 tsp freshly ground black pepper
  • 2 tsp sea salt
  • 2 cloves garlic, minced
  • 1 golden shallot, minced
  • 1-2 birds eye chillies (pending how hot you want), minced
  • 2 tbsp Lemon Paste
  • 1/3 cup Extra-Virgin Olive Oil
  • To serve; 4 classic burger buns, sliced in half
  • 1 head Cos lettuce, leaves torn
  • 200g Perino Tomatoes, sliced in half 

 

Method 

1. Preheat the Everdure FUSION to high heat. 

2. To make the Peri Peri Spice Paste, add all ingredients to a bowl and mix to combine well. 

3. Scoop 4 tbsp of the paste into a large bowl and add the Chicken Breast steaks and massage the paste into the chicken to coat well. 

4. Place chicken onto the hot grill and cook for 2 minutes on each side, or until browned. Sprinkle over the Shredded Cheese and allow to cook for 2 more minutes, until cheese is melted and chicken has cooked through. 

5. Add the mayonnaise to a bowl and add in 1 tbsp of the Peri Peri Spice Paste and mix to combine.
